Irish Cobbler is a heritage potato variety originating from the 1870s. This type matures early and is renowned for making exceptional mashed potatoes. It’s also an excellent choice for potato salads and soups. The plants yield medium-sized tubers with light-colored, slightly textured skin and deep-set eyes. Many consider it one of the top-tasting early potato varieties available.
